Here’s a recipe that’ll make you think twice before saying you don’t have time to cook.  I love recipes like this one!  There are many, many nights that we may have less than an hour, or even less than 30 minutes at home before dashing off to a ballgame or other school or church event.  This soup can literally be made in minutes.  There’s nothing wrong with simple!  It is very tasty and all my kids love it.

Ingredients:

1 onion, finely diced

1 stick margarine

3 cans Veg-all, drained

3 cans cream of chicken soup

3 cups milk

3 cups shredded cheddar cheese

Directions:

Saute onion in margarine until onions are tender.

When onions are tender, add the cream of chicken soup and milk and stir with a whisk until smooth.

Stir in the drained cans of Veg All.

Stir in shredded cheddar, continueing to stir and heat until cheese is melted.

When cheese is melted and soup is hot enough, it’s ready to serve.  It doesn’t get much easier than that!
