Homemade Strawberry Ice Cream
I’ve already made this recipe a few times this summer and summer break has just begun. This recipe is a variation of a vanilla ice cream recipe that I’ve used for years. I love the creaminess and the addition of fresh strawberries takes it to the next level. If you want to make vanilla ice cream, just leave out the strawberries. It’s the best vanilla ice cream recipe I’ve ever tried and I think you’ll love the results you get from the addition of strawberries.
Ingredients: (amounts depend on the size of your ice cream freezer)
For a 1 gallon ice cream freezer (most common size) use the following amounts:
5 cups milk (I used 2% because that’s what we drink, whole milk would work as well)
1 3/4 cups sugar
1 can sweetened condensed milk (such as Eagle Brand)
1 large can evaporated milk (such as Pet or Carnation)
1 pint heavy cream (or two half pint cartons)
1 teaspoon vanilla
about two cups fresh strawberries, mashed or frozen strawberries, thawed and crushed
For a 1 & 1/2 gallon ice cream freezer, use the following amounts:
7 1/2 cups milk (I used 2% because that’s what we drink, whole milk would work as well)
2 3/4 cups sugar
1 1/2 cans sweetened condensed milk (such as Eagle Brand)
1 large can and 1 small cans of evaporated milk (such as Pet or Carnation)
1 1/2 pints heavy cream (or three half pint cartons)
2 teaspoon vanilla
about three cups fresh strawberries, mashed or frozen strawberries, thawed and crushed
Directions:
Pour milk into ice cream freezer.
Add sweetened condensed milk and evaporated milk.
Add whipping cream, sugar, and vanilla.
Spoon in crushed strawberries.
Stir with a long spoon to combine.
Place the lid on the freezer, and begin to layer ice and salt around freezer, according to directions that came with your freezer
Freeze until done.
Remove dasher, and if you want to let it “ripen”, replace the lid and pack with additional ice until ready to serve. We rarely have the patience for this step, we usually eat it as soon as it’s ready!
