Peanut Butter Cup Cookies (a.k.a. the most awesome cookie ever)
I had an idea for a cookie that I thought I’d like to try to create. The idea was to combine my favorite peanut butter cookie recipe with one of my favorite candies (Reese’s peanut butter cups). Last night, we happened to have several teenagers over for homemade pizza and a movie so I figured I had my test subjects! I knew that even if they weren’t very good, they would still probably be eaten since teenagers will eat almost anything (and large quantities of it).
I love peanut butter cookies and my favorite recipe is one I’ve used for years. If you decide to just make the cookie alone, without the peanut butter cup, this is a great recipe. When Leah was in 4th or 5th grade, she entered these peanut butter cookies into the local county fair. She won a blue ribbon which earned her the right to also compete in the Kentucky State Fair. She won a blue ribbon at that level too, so we call these Leah’s State Fair cookies, but their real name is crackle-top peanut butter cookies. Anyway, I love this cookie and thought it would be even better with a peanut butter cup on the inside. I wasn’t sure if it would work, but knew it was worth a try.
They were delicious. The kids eagerly gobbled up the first pan of cookies once they’d cooled a bit. While the second pan was baking, I went back to the laundry room to start another load. As I was pulling clothes out of the dryer, one of the kids came back to where I was and said “Mrs. Lewis, are there any more of those most awesome cookies ever?” Needless to say, everyone loved them!
Ingredients:
3/4 cup margarine
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
3/4 cup peanut butter
1 teaspoon vanilla
1 3/4 cup all-purpose flour
1/2 teaspoon soda
1/2 teaspoon salt
sugar for rolling
1 bag miniature peanut butter cups, unwrapped
Cream white and brown sugars with margarine until light and fluffy.
Blend in egg, peanut butter and vanilla.
Add dry ingredients and mix well.
Shape a piece of cookie dough around each peanut butter cup, sealing to completely cover cup.
Roll into a smooth ball, then roll ball in sugar and place on the baking sheet.
Bake at 375 degrees for about 10 minutes until cookies are set and edges are slightly brown. Cool on pan for a few minutes, then remove to cool on a wire rack.
Makes about 24 large cookies.
