Individual Fresh Blueberry Pies
This is about the simplest pie there is, but oh so delicious! No complicated techniques, no special equipment, just a rolling pin (if you are making your own pie crusts) and a bowl and spoon. Just toss a few ingredients on top of your fresh blueberries, stir, and you have a delicious pie filling that will please everyone in the family!
Ingredients:
4 cups fresh blueberries
1 cup sugar
3 Tablespoons all purpose flour
1/2 teaspoon grated lemon peel
1/2 teaspoon cinnamon
dash salt
pie pastry for 2 crust pie (see my pie pastry recipe in another post)
Directions:
Rinse blueberries and place in a bowl.
Add sugar, flour, cinnamon, salt, and lemon peel.
Toss to combine. Roll out the pie pastry to fit individual pie dishes. This recipe makes enough filling for about 5 or 6 individual pies. I used several small mismatched dishes.
Spoon in the blueberry mixture.
To make a top lattice crust, roll out a circle of pie pastry and cut into strips.
Weave them on the top of the pie, and tuck the ends into the sides of the pie dish.
I did some of the tops with a solid piece of pastry and some with the left-over scraps of pastry for a “rustic” look.
Bake at 400 degrees until crust is lightly browned and filling is bubbly. A big scoop of vanilla ice cream on top of the warm pie is an absolute must!!
