Chocolate Fudge Pie with Ice Cream
If you live in our area of Western Kentucky, then you have undoubtedly heard of Patti’s 1880’s Restaurant. Actually, you might even know about it if you are from outside of this area, because Patti’s has been a popular destination for folks in this area and from outside the area for many years now. One of their claims to fame is their large variety of scrumptious desserts. This is my own version of Bill’s Boatsinker Pie, made famous by Patti’s. This is not the Patti’s official recipe, but I think it’s pretty close. For this version, since I served this at the family’s Christmas tree trimming party, I made it more “Christmasy” by using peppermint candy cane ice cream. I typically serve it with coffee ice cream or mint chocolate chip as they do at Patti’s, but it would be good with any kind of ice cream. This is not a difficult recipe, but the results are spectacular!
Ingredients: (This recipe makes one pie)
1 unbaked pie shell
3 eggs
1 stick margarine
1 1/2 cups sugar
3 1/2 Tablespoons cocoa
5 oz. can evaporated milk (1/2 cup + 2 Tablespoons)
dash of salt
chocolate syrup
Directions:
Preheat oven to 350 degrees. This recipe makes one pie, but I doubled it since I had to make pies for two different events. I froze one of the pies after baking. Once the baked pie has cooled, it freezes great. To serve, just thaw out for an hour or so, then place in a low oven to reheat for a few minutes.
Prepare (or purchase) a pie crust. (I’ve got a recipe for a pie crust on my blog).
Melt the stick of margarine in the microwave.
Place all ingredients (except for chocolate syrup) together in a mixing bowl.
Beat until well combined. There may be a few little clumps of cocoa that won’t mix in, but don’t worry about that.
Pour mixture into unbaked pie shell.
Bake in a preheated 350 degree oven for about 50 minutes, or until the filling is set and the crust is brown around the edges.
Cool just a bit, then serve warm or at room temperature if you prefer, with a big scoop of your favorite ice cream. Drizzle chocolate syrup over all to serve. Pie can be made ahead, then reheated in the oven just before serving.
The Bill’s boat sinker is absolutely Heath’s favorite pie, so he has come up with his own that we like to call the Heath-sinker!!! Lol.
