Grilled Stuffed Burritos
This recipe is really nothing more than assembling some pre-made ingredients. But there’s nothing wrong with that! Especially if it’s a recipe the whole family enjoys and you’ve been at work all day, got a couple of loads of laundry to do, got to get everybody fed before heading out again for Wednesday night church services. The only real cooking required for this recipe is browning the ground beef. It is a good recipe, and you could spend longer on it by making your own refried beans, Spanish rice, etc. but we like this one just fine. It sure fits the bill for a busy evening.
Ingredients:
1 lb. lean ground beef, browned and drained
1 pkg. taco seasoning mix
1 can refried beans, heated
1 or 2 pkg. Uncle Ben’s Spanish Rice (microwave ready)
Large burrito size flour tortillas
Shredded cheddar cheese and other toppings you may enjoy such as shredded lettuce, diced tomato, salsa, and sour cream
Directions:
Brown the ground beef and pour off the fat. Ad the taco seasoning mix and follow the package directions for mixing.
Assemble the other ingredients, and heat the refried beans and the rice.
Lay out one of the tortilla and begin assembling the burrito.
Spread the refried beans on the tortilla and top with some of the taco meat.
Fold the two sides in first.
Then fold up the bottom.
Then fold the top down.
Place seam side down on a George Foreman grill or a panini press. You could also toast on each side in a skillet until lightly browned.
Serve with salsa and chips and sour cream if desired.
Yummy idea for a quick week night meal!
