Crockpot Chicken in Mushroom Gravy
I love a good crockpot recipe and this one certainly fits the bill. I assembled this very quickly this morning before leaving for work and cooked it on low all day. I used a crockpot liner for easy clean up. Add a couple of vegetables and rice or egg noodles if you like, and you’ve got an excellent meal that’s virtually ready to put on the table when you walk in the door.
Ingredients:
6 boneless, skinless chicken breasts (or the number you need for your size family)
freshly ground black pepper
1/4 cup chicken broth or white cooking wine (I used cooking wine)
1 – 10 oz. can cream of mushroom soup
1 – 4 0z. can sliced mushrooms, drained
Directions:
Place chicken breasts in crock pot and sprinkle with pepper.
Combine cream of mushroom soup with chicken broth or wine and stir to combine. Pour this mixture over the chicken.
Top with mushrooms and cook on low all day (at least 8 hours).
The chicken is very tender when done and it makes a nice gravy. I served this over hot cooked rice and it was really good. The riced soaked up some of the gravy. It would also be good served over hot buttered egg noodles.
Made this for supper tonight. We will definitely be having it again sometime.
