Key Lime Pie
Crust:
1 1/4 cups graham cracker crumbs
2 Tablespoons sugar
6 Tbls. melted butter
Combine and press into the bottom and up sides of a lightly greased pie plate.
Bake for 5 minutes in a 350 degree oven and cool while you prepare the filling. It’s not necessary to cool crust completely since you will be baking again anyway.
Filling:
3 egg yolks
1 14 oz. can sweetened condensed milk
Mix these two ingredients, then stir:
1 teaspoon grated lime peel
1/2 cup fresh lime juice (fresh is best, which takes approximately 3 regular sized limes)
Pour filling into prepared crust and bake at 350 degrees for 15 minutes. Cool for about 20 minutes then refrigerate til chilled. Serve with whipped cream.
